These are black winter truffles (tuber melanosporum) from Tibet’s low lying souythest region. Currently in season only until late December. Great for bringing their prized earthy aroma and flavor to your dishes. Try shaving over your pasta dishes (or scrambled eggs!), making truffle butter or sauces, or pairing with a variety of cheeses. Store in the fridge and buried in the uncooked rice, and they will last for about 10 days. Tips: - Don’t heat them up for a long time, as they’ll lose their flavor. Use as a finishing touch instead. - Also, less is more! Truffles have a strong flavor, so a little goes a long way.
