This is a half rack of 100% grass-fed wagyu short ribs from First Light Farms in New Zealand, the first group of farmers to ever raise wagyu on exclusively grass. This half rack was cut through the middle of the rib (see the picture). You will receive one half rack (not 2 as in the picture, which is intended to show the direction of the cut). Short ribs are incredible for barbecuing, braising, roasting, or even popped into the sous vide. The sky is the limit with short ribs, which are known for being a tender and and incredibly flavorful cut due to the fat (marbling) content.
