This is ground venison made with the shoulder shank cut of grass-fed, farm-raised venison from First Light Farms in New Zealand. We grind the meat in house and do not add anything to it. As it is venison, it is extremely lean with a lean meat to fat ratio of approximately 92% / 8%. You can cook ground venison exactly the way you cook ground beef - not a big difference when it comes to cooking. Taste-wise, this grass-fed venison has an earthier, and very slightly game-y taste. A nice alternative choice for lean burger patties, chili con carne or event just a minced red meat for salad toppings.
