This is ground beef (chuck roll) made with 100% grass-fed wagyu from First Light Farms in New Zealand. We grind the meat in house and do not add anything to it. The lean to fat ratio is approximately 80% / 20% for this chuck. Because of this slightly higher fat content, you get incredibly juicy, flavorful ground meat that sticks together well - making it perfect for burgers, meatballs, and lots more.
