South Australian cooked Southern Rock Lobster is Ferguson's specialty! The Southern Rock Lobster has a superb taste and texture due to the nutrient-rich, cold, pristine waters of the Southern Ocean. The slow-growing lobster species has a sweet, delicate but firm white flesh, which makes it perfect for any special occasion. Wild caught from the Southern Ocean, off the coast of South Australia. Preparation: Defrost in the fridge overnight. Prepare for heating: Once thawed, rinse the lobster under cold water. Preheat your oven to 350°F (175°C). (Re)heat the Lobster: Wrap the lobster in aluminum foil. Place it on a baking sheet and heat it in the oven for about 10 to 15 minutes. The time may vary depending on the size of the lobster. Check doneness: Ensure the lobster is heated through. It should be warm to the touch. Avoid overcooking as it can make the lobster rubbery. We suggest serving the lobster with melted butter, lemon wedges, and your choice of sides. You can also try grilling, steaming, or boiling the lobster. Since the lobster is already cooked, and you are just warming it up, be careful to avoid overcooking it because this will make it tough and rubbery. See here for some great recipe ideas from Ferguson: Recipe link About the producer: The icy, cold waters off the coast of southern Australia are known for being some of the least polluted and most pristine marine environments in the world - resulting in exceptionally high-quality seafood. Warmer water from the north converging with cooler water from the Southern Ocean creates a unique habitat which is home to lots of unique species like the Southern Rock Lobster, King George Whiting, Southern Bluefin Tuna, and many more. Australia recognizes the value of this majestic environment and has been one of the world’s most committed governments to sustainable fishing practices, closely monitoring fish stocks for long term viability with strong enforcement of sustainability regulations. The Ferguson family have been fishing in these waters since the 1960s, and are well known throughout Australia for their commitment to quality. Starting off as fishermen, they later expanded into the processing and export operations (developing award-winning packaging solutions along the way) to ensure their products’ quality remained as high as possible from the ocean to your plate. One part of Ferguson’s approach that we especially appreciate at Paleo Robbie: In addition to the famous Southern Rock Lobster or King George Whiting, Ferguson also make an effort to offer a range of lesser-known (but very delicious) fish species to develop a market for these abundant & highly sustainable varieties.
