The white peppercorns are made from berries that have been allowed to fully ripen on the vine before they are harvested, which have about 15% of the bunches. The ripe berries are then soaked in water for a night to soften the outer flesh. The outer flesh is then removed by rubbing without any bleaching agent, revealing the inner seed which is white-grey in color and fully cover with fiber. These seeds are then dried and become white peppercorns. Our white peppercorns are quite special and unlike others, as most of the white peppercorns are made from dried black peppercorns. This difference in the ripeness of the berries results in a difference in flavor and appearance.
