Wild Leopard Coral Grouper Filet

Wild-caught, sustainable seafood from the pristine turquoise water of Southern Thailand. Every morning, our fishermen take their small boats out to the ocean and return within a couple hours. Because of the unique, cliff-like topography of the Andaman that makes deep water fishing more accessible, our fishermen are able to catch many varieties of abundant seafood from their short 10-mile trip. The Leopard Coral Grouper (ปลาเก๋าแดง/ ปลาเก๋ากุดสลาด) is the king of all groupers. With its beautiful distinctively pink-red skin and sweet-yet-mild taste, this fish is extremely popular among the locals. The texture is a crossover between seabass and halibut, and with the natural sweetness and flakes--superior to other grouper cousins. You can go super simple with pan searing until crispy skin, or try "en papilote" (wrapped and baked in parchment paper) in a bed of thinly sliced fennels and lemon (or your favorite herb combo) and a touch of white wine - the fish will be infused, fragrant, and of course, delicious. Frozen ~250-300g fillet Good to note: We love our ocean friends and want to be as sustainable as possible, so you may not always get the picture-perfect center piece.
